Recipe Find: Oat Pecan Pralines still a winner

SAN ANTONIO — Even though the recipe ran in the Express-News 20 years ago, Paula Byers still remembered it fondly and hoped we could track it down for her.

Byers said, “I lost a recipe from your newspaper that I cut out in 1993-1994. I know I'm right about the year because I made the recipe for the first time right after I cut it out of the paper, and I made it for my boyfriend when I was a college senior, in 1993-1994.

“The recipe was for a praline cookie and uses pecans and brown sugar and maple extract.

“I remember that it won some sort of baking contest. That's why I tried it because it sounded so good.

“I made it for 10 years or more, but now I can't find the recipe anywhere. Can you help me and send me the praline cookie recipe?”

I think the recipe that Byers is talking about is Oat Pecan Pralines, which we published on Jan. 12, 1994.

The recipe won first prize for Betty Freeman of Sherman Oaks, Calif., a retired school principal and novelist, in the Fourth Annual Quaker Oatmeal Recipe Contest.

The recipe evolved from a basic oatmeal cookie. Freeman said of the recipe at the time, “I love maple, and the maple flavoring was a last-minute addition.”

Either quick or old-fashioned oats can be used in the recipe but old-fashioned oats give a chewier texture.
